Bakery and coffee near Freedom Square

A small bakery two steps from Freedom Square, named after the rum baba it keeps as its signature. Dough, chocolate and the rest are made on the spot: the bakers work behind the counter, in plain sight.

The baking here is not Georgian: croissants, kouign-amann, chaussons, maritozzo. They call themselves an artisan bakery and coffee shop and make the dough with French butter and Italian flour. Besides the sweet pastry there is savoury, with salmon, spinach or fresh cheese, and coffee, filter included, from local roasters and from abroad.
