Satsivi

Satsivi is a festive dish of western Georgian origin: boiled or roasted poultry (chicken, and traditionally turkey) under a thick, cold sauce of walnuts, garlic and spices. The name comes from «tsivi», meaning cold.

It is the centrepiece of the New Year and Christmas table across Georgia. The satsivi sauce is a close relative of Megrelian bazhe; it is served chilled and garnished with pomegranate seeds.
