Rich tripe soup

Khashi

Khashi is a very rich soup of beef trotters and tripe simmered into a white, hearty broth. It is traditionally eaten early in the morning, mostly in winter.

Crushed garlic, salt and dry lavash are added at the table, accompanied by chacha. It is considered filling and 'restorative'.
