Sulguni

Brined cheese, western Georgia

Sulguni is a springy brined cheese from western Georgia, layered and stretchy, moderately salty with a light tang. It is the go-to cheese for khachapuri and many dishes.

It is eaten fresh, pan-fried or smoked; smoked sulguni keeps longer and has a fuller flavour.
