Guda cheese

Guda is a sharp, aged sheep's-milk cheese matured in a leather bag (a guda), which gives it its name. It is a tradition of mountainous Tusheti and its transhumant shepherding.

Salty and pungent, with a strong aroma, it pairs well with wine and as a seasoning for dishes.
