Meat dumplings from the mountains

Khinkali

Khinkali are large dough pouches filled with spiced minced meat; cooking creates a hot broth inside. They come from the mountains of eastern Georgia.

They are eaten by hand, held by the twisted 'stem' (which is left uneaten): you bite first and sip the broth. The number of pleats is a matter of skill.
