Chicken braised in tomato and herbs

Chakhokhbili

Chakhokhbili is chicken braised in a thick sauce of tomato, onion and abundant fresh herbs (coriander, parsley, basil). The name comes from 'khokhobi', pheasant, the original bird.

Today it is usually made with chicken. Mild and fragrant, it is served with bread to mop up the sauce.
