Ajika

Hot chili paste

Ajika is a hot paste of red (or green) chili, garlic, salt and aromatic herbs such as utskho-suneli and coriander. The classic version is very spicy and tomato-free.

Native to western Georgia, it is used as a condiment for meat and added to stews and marinades.
