Grape-must pudding

Pelamushi is a thick jelly-like dessert made from grape must, boiled down and set with corn or wheat flour, then cooled into a firm pudding. It is served sliced, often sprinkled with nuts.
Pelamushi and the related tatara come from the same must as churchkhela: tatara (thinner) is used for dipping the nuts, while pelamushi sets as a dessert in its own right. It is an autumn, harvest-season sweet.
Colour and flavour depend on the grape: red grapes give a deep-pink pelamushi, white grapes an amber one.
