Puff-pastry khachapuri

Penovani is a khachapuri made of puff pastry (pena means «layer»): crisp layers outside, melted Imeretian cheese or sulguni inside. It is usually folded into a square envelope.

It is the most «street» of all khachapuri: baked in bakeries all over Georgia and taken away with morning coffee or for the road.
