Churchkhela

Nuts in thickened grape must

Churchkhela

Churchkhela is a traditional sweet: walnuts threaded on a string are repeatedly dipped in flour-thickened grape juice (tatara/pelamushi) and dried.

The result is a chewy 'sausage', energy-rich and long-keeping, historically the food of warriors and travellers.
